INGREDIENTS FOR 8 PERSONS:

• 350 g flour
• 150 g butter
• 150 g sugar
• Half lemon juice + one full grated lemon rind
• 2 eggs
• 1 bag S. Martino baking power

FOR THE FILLING:

• 1 S. Martino vanilla pudding
• 50 g peeled and chopped almonds
• Half litre milk
• 50 g sugar
• S. Martino icing sugar

Make the filling. In a pan pour pudding mix, almonds, sugar and gradually milk. Boil for 2 minutes and let cool, stir from time to time.
Make the cake dough. Turn oven to 175°.
Grease with butter a 26 cm round cake tin.
In a bowl pour flour, sugar, baking powder, pieces of butter, lemon juice, grated lemon rind, 2 eggs and stir until very well mixed. Divide the dough in two pieces and make two disks a little bit bigger than the cake tin, arrange the dough disk in the cake tin so that bottom and rims are well covered.
Pour the filling and cover with the other dough disk, press the edges of the cake together with your finger tips.
Bake for about 45 minutes.
Let the cake cool and sprinkle icing sugar over the top.
