• 1 pinch of salt

• 500 g ricotta cheese
• 100 g peeled and chopped almonds
• 1 spoonful S. Martino plain cocoa powder

Turn oven to 180°. Grease with butter and flour a 26 cm round cake tin. In a bowl or on the table pour flour, add 150 g sugar, butter cut into pieces, yolk, salt and baking powder. Stir well the mixture. Separately in a bowl, mix ricotta cheese with remaining sugar, cocoa powder, almonds and rum. Divide the dough in two parts and make two disks a little bit bigger than the cake tin, arrange the dough disk in the cake tin so that bottom and rims are well covered. Pour the filling, smooth the surface with the back of a spoon and cover with the other dough disk. Press the edges of the cake together with your finger tips and make some small holes with a fork.
