INGREDIENTS FOR 8 PERSONS:
• 200 g flour
• 100 g potato flour
• 150 g butter
• 3 eggs
• 30 g S. Martino plain cocoa powder
• ½ glass milk
• 1 pinch of salt
• 1 bag of S. Martino baking powder

| Turn oven to 180° C. Grease with butter and flour a 24 cm round cake mould with a hole in the middle. Mix together flour, potato flour and baking powder. In a bowl melt butter with sugar until very soft, and then add yolks one at a time. Sift together flour, potato flour, and baking powder and add to the mixture, add a pinch of salt, milk and mix until very well amalgamated. Cut the dough in two equal sizes and gradually add cocoa powder to one part. Beat egg whites and add them gently in equal parts to the two dough parts. . Pour first the white dough into a cake tin and then the plain dough. Bake about 45 minutes. |
