INGREDIENTS FOR 8 PERSONS:
• 130 g of S. Martino potato flour
• 4 eggs
• 90 g sugar
• 1 bag of S. Martino vanillin
• 1 bag of S. Martino icing sugar |

| Turn oven to 180°C. Beat egg yolks with half of the sugar. Add vanillin and potato flour. Beat egg whites with remaining sugar. Gently add to the mixture. Line the baking tray with greaseproof paper. Transfer mixture to pastry bag and pipe into 6 cm long fingers. Dust well with icing sugar and bake for about 15 minutes. |
