INGREDIENTS FOR 8 PERSONS:

• 450 g S. Martino potato flour
• 250 g sugar
• 250 g butter
• 4 eggs
• a pinch of salt
• 1 bag of S. Martino baking powder
• 1 bag of S. Martino icing sugar

Turn oven to 175°. Grease with butter and flour a 24 cm mold with high edges and a hole in the middle. Melt the butter with sugar, add 4 yolks one at a time and stir in potato flour and baking powder sifted together.
Beat egg whites with a pinch of salt and add gently to the mixture. Pour the mixture into the mold and bake Gonzaga ring cake for about 60 minutes, remove from the oven and let cool. Decorate Gonzaga ring cake with icing sugar.
