INGREDIENTS FOR 8 PERSONS:
• 280 g flour
• 2 eggs
• 100 g butter
• 100 g sugar
• 1 galss milk
• 150 g raisins
• 1 bag of S. Martino brewer’s yeast
• 1 bag of S. Martino icing sugar

Turn oven to 50°. Soft raisins in lukewarm water. Dissolve brewer’s yeast in half glass of lukewarm milk with 1 teaspoonful of sugar and let stand for 10 minutes.
In the meantime, beat egg yolks in a bowl, add butter melted in a bain-marie, squeezed and dried raisins and, gradually, flour, alternately with remaining milk. Then add melted yeast.
Beat egg whites and mix gently. Pour the mixture in a cake pan with a hole in the middle and let stand with the oven open for about 1 hour. Remove panettone from the oven and turn oven to 180°, after 10 minutes put the cake in the oven again. Bake for about 40 minutes. Remove from the oven, allow to cool, remove it from the pan and sprinkle with icing sugar.
