• 1 bag S. Martino baking powder
• 200 g white flour
• 100 g first quality corn meal
• 120 g sugar
• 100 g raisins
• 1 egg
• Lemon rind
• Sufficient milk
• S. Martino icing sugar

Turn oven to 180°. Grease with butter and flour a cake tin with a diameter of 24 cm or a plumcake mould.
Melt the butter in a bain-marie. Soften the raisins in lukewarm water. In a bowl mix sugar, egg and melted butter.
Gradually add the two flour types mixed with baking powder, then grated lemon rind and sufficient milk until a well-blended mixture is obtained. Finally add drained raisins. Before serving the corn meal cake, sprinkle with icing sugar.
